First I beat a dozen eggs within an inch of there lives set aside
Second I cook up some celery and onion till soft then I add I package of tricolor slaw mix and cook until al dente set aside.
Third I boil up some chicken thighs in chicken stock, soy sauce and cook till tender remove thighs and let cool then chop.Continue simmering sauce and let reduce and right before you start making your pancakes add a cornstarch slurry to thicken.
I add salt and pepper and granulated garlic to all three steps above.
Combine the vegetables, chicken and eggs and start making pancakes. You want to cook till they get golden brown like this.

Then transfer to a vessel that will hold them and ladle the sauce over each pancake as you finish.Such as this.
I don't have any measurements on anything I just wing it.I'm adventurous like that. You may add what ever other spices or vegetables you wish but this is how I make mine.So in closing this is a very good meal.If you've never had egg fo yung you should try it.I bet it would be even tastier with some yard eggs.
